| Making the Alsatian Apple Tart. First make dough and freeze the pie shell. Then bake with weights, remove the weights, and bake a bit more without weights. |

| While the pie shell bakes, peel and cut up the apples. Each quarter-apple is scored but not cut through. |

| Arrange the apples in the pie plate, bake briefly, and add the cream filling. The final baking browns the apples and sets the filling. Doesn't that look delicious? |

| Meanwhile, a neighbor brought us a gift of a blueberry pie. We are up to the challenge: we all ate some for lunch. |
