Back in my Kitchen

French onion soup topped with Len’s bread and melted cheese: back to cooking after a long vacation.

Onion soup starts with lots of chopped onions…

Browning the onions — an hour of very slow cooking!
Ready to go: freshly made stock, white wine, salt & pepper.

Onions and stock simmer for another half an hour.

A nice red wine with the soup.

Oooo, that soup! I love French onion and a glass of wine sounds so good. I’ve been on whites lately as they are refreshing in the hot evenings.

Love onion soup! I had a friend who always used brandy in her stock so I do that too.

French onion is one of my favorites and I make it constantly in the winter (with extra onions because you HAVE to have extra caramelized onions!) This looks fabulous!
