Yellowtail snapper was featured today at Whole Foods, so I bought one. I decided to cook it with some Moroccan-style spices, onions, tomatoes, dried apricots, and preserved lemon.

My newest spice: Ras El Hanout. I made the preserved lemons
last November -- lemons in salt and lemon juice. I also used some
slow-roasted tomatoes from the farmers' market, frozen last August. |

Olives and pomegranate seeds were the garnish. |

After cooking the spices and vegetables for quite a while, I added the fish. |

Boy does that look good! I sure wish we had a Whole Foods around here, but alas, we don't.
Beautiful combination of colors and tastes. I don't cook whole fish, as Bob has a bone fear, so just get fillets, but it does look great in your dish.

I love fish but don't get to have it often because my son won't eat it.
I'm not super fan of fish but snapper is my favorite and you had me a lemon with salt! I should be checking whole foods more often!
