Cranberries Again

It's almost Thanksgiving. The Michigan cranberries are beautiful. So I'm revisiting many of my old favorite cranberry recipes.

Cranberry Brownies

1 stick butter
1 cup sugar
2 eggs
1 Tb. vanilla
1 Tb. oil
1 cup flour
6 Tb cocoa
1/2 tsp baking soda
1 cup halved fresh cranberries or 1 cup dried cranberries



Preheat oven to 350º and grease and flour a 9 x 9 inch baking dish.

Cream butter and sugar in mixer. Stir eggs, vanilla, and oil together and add to mixer bowl, beating until fluffy. Sift flour, cocoa, and soda together and add to mixture. Beat until smooth.

Spread batter in the prepared baking dish. Distribute cranberries over the top and press into the batter. If using fresh berries, sprinkle very lightly with sugar.

Bake at 35oº for 35-40 minutes until a tester comes out clean.
